Here's another post in my occasional series about, "what do vegans eat?" This dish contains farro (a nutty flavored ancient grain), yellow tomatoes, cilantro, mint, scallions, black-eyed peas, carrots, finely diced tomato and onion salsa, shredded spinach, a taste of pineapple salsa, all on a warm corn tortilla. Half an avocado diced was the final topping. Enjoying healthful and tasty food does not require the killing and eating of animals.
